Picked peaches and apricots yesterday. Today I dried the apricots and started peach wine. Lest I forget, this is the recipe for this batch of wine… 6lbs peaches after pitting (skins on, smashed with a potato smasher), 10lbs sugar, 2.2 gallons DI water, 5 campden tablets, 3.75 tsp acid blend, 2.5 tsp pectin enzymes, 0.5 tsp tannins, 1.25 tsp yeast enzymes, 1 pkg wine yeast.
